Built for the love of espresso

The ambition was to create an uncompromising espresso machine that celebrates every detail of what we have come to love about espresso. It's a purist no corners cut machine. Focused only on pulling exceptional espresso shots we had no need for a steam boiler. This allows us to simplify the machine, drastically reduce power consumption and achieve one of the smallest footprints in its class at 15”X14.5”x15” (380x368mm).

The STALT 759 strips away everything non-essential and focuses entirely on extraction quality, mechanical simplicity, and long-term serviceability.

Glass and Aluminium

We chose a transparent Glass construction supported by aluminum braces to celebrate the machine’s engineering and craftmanship. Revealing our honest no-corners-cut philosophy.

Manual controlled brass espresso profiling knob

Pressure Profiling

Pressure is controlled manually through a weighted brass dial and industrial-grade gear pump, giving the user direct, tactile control over every shot.

The user has direct control over the extraction pressure throughout the shot, allowing pressure to be adjusted in real time to shape flow rate, extraction yield, body, clarity, and balance.

At the heart of the system is the Fluid-o-Tech precision gear pump for direct manual control. Unlike traditional vibration or rotary pump systems that operate at a fixed pressure curve, the gear pump allows smooth, immediate, and highly repeatable pressure adjustments throughout extraction.

Detail Obsessed

Every detail has been considered to celebrate the espresso brewing process. Inspired by our love for vintage cars and the immersive expreience of manual transmissions. Our pressure dial celebrates that design language in a perfomance oriented package.

Compact Footprint

We dropped the steam boiler, drastically reducing power consumption and achieving one of the smallest footprints in its class at 15”X14.5”x15” (380x368mm).

Stalt espresso removeable drip tray glass and aluminum

Floating Drip Tray

The removable drip tray was designed not only to be stowed beneath the machine when not in use, reducing the machine’s overall footprint, but to serve practical purposes beyond stowability.

Instead of hiding, our drip-spout is front and center showcasing the theater of the brew process. When you release the pressure from the portafilter the back-pressure is released, pouring the remaining water into the drip tray.

Saturated espresso boiler group head

Saturated Boiler Design

The group head and boiler neck are machined from a solid block of 304 stainless steel, with all internal water routing accomplished through precision-machined channels in the metal itself rather than internal tubing, eliminating unnecessary fittings, seals, and service points. The assembly is then precision micro-welded to the 304 stainless steel boiler body, creating a simplified boiler construction with fewer sealing surfaces, fewer wearable gaskets, and fewer potential leak points over time.

Bluetooth pid set at 202 degrees for optimal espresso

Bluetooth Enabled Industrial PID Controller

Temperature stability is another critical variable in espresso extraction, and maintaining it with precision requires more than a basic thermostat. This machine uses an PID controller, designed for demanding industrial environments and selected for its high-precision control, self-adaptive tuning capabilities, and Bluetooth connectivity. The PID continuously monitors and adjusts boiler temperature, minimizing temperature swing and improves shot-to-shot consistency.
